✓ Traditional technology with lees ageing for at least 24 months;
✓ Blanc de Blancs, definitely; Blanc de Noirs, possibly;
✓ In autumn, we’re going to plant a small batch of Chardonnay and Pinot Blanc;
✓ We’ll experiment with Pinot Noir and Riesling;
✓ For now, we plan a limited run of 2,500─3,000 bottles a year.
